Chocolate Cream Cheese Fudge

Here is a no ‘fail-fudge’ recipe which is you can make in a jiffy using cream cheese. Cream cheese is a soft, mild-tasting fresh cheese made from milk and cream. This chocolate cream cheese fudge recipe is so simple to make, smooth and of course delicious  – almost addictive.
I use milk cooking chocolate which is my favourite, but you can use any kind of chocolate for this recipe


INGREDIENTS:-
  1. Cream Cheese - 125g
  2. Milk -1 TBS
  3. Vanilla - 1 TSP
  4. Icing Sugar - 225g
  5. Milk Cooking Chocolate - 200g
  6. Cashew/ Hazelnuts - 55g
HOW I MADE IT:-
  • Lightly roast the nuts and set aside.
  • Place cream cheese in a microwave safe bowl, soften on HIGH for 30 seconds.
  • Add 1 tablespoon of milk, vanilla.
  • Sift the icing sugar over the cream cheese mixture.
  • Beat everything until smooth.
  • Place chocolate in a microwave safe bowl and melt on HIGH for 40-50 seconds.
  • Add roasted nuts into melted chocolate and mix thoroughly.
  • Fold the chocolate into cream cheese mixture.
  • Spread the mixture into greased/lined square tin.
  • Cover the tin with cling film.
  • Refrigerate until set.
  • once the fudge is set, Cut into squares.
  • Store in airtight container in refrigerator.
Notes
You can use 70% cocoa cooking chocolate for lesser sweet. If you are a fan of white chocolate you can use white cooking chocolate.

Sri Lankan Golden Butter Cake

This golden butter cake is one of the classic cake in Sri Lanka. There’s nothing better than sitting down on a weekend afternoon with a cake and a cup of tea. Butter cake is quite a dense style of cake and is perfect to serve for afternoon tea when you have guests. It also makes a great base for any birthday cake recipes. This recipe will yield 1 kg of cake.
INGREDIENTS:-
  1. Plain flour - 250g
  2. Baking powder - 1 1/2 TSP
  3. Butter - 250g
  4. Sugar - 250g
  5. Eggs - 4 ( Lightly beaten)
  6. Milk - 3/4 Cup or 190 ml
  7. Vanilla extract - 1 1/2 TSP
HOW I MADE IT:-

  • Preheat the oven to 180°C
  • Sift the flour and baking powder and set aside.
  • In a large bowl beat the butter and and sugar. Beat until the mixture is light and fluffy.
  • Lightly beat the eggs and add gradually to the creamed mixture beating well after each addition.
  • Add vanilla essence and beat for another minute.
